Bacon Wrapped Crackers

8 Keebler Club crackers

4 slices bacon, cut in half

8 teaspoons brown sugar OR grated Parmesan cheese

Preheat oven to 250°.

Line baking sheet with parchment paper and put wire rack on top of parchment paper.

Arrange crackers on rack and place on teaspoon brown sugar OR Parmesan cheese on cracker (or do 4 brown sugar and 4 Parmesan cheese).

Carefully wrap ½ slice of bacon lengthwise on cracker over sugar/Parmesan, tucking ends under cracker.

Bake in oven for 2 hours. Serve warm.

2 servings, 170 calories per serving

Hack: Store leftovers in refrigerator. Reheat in microwave for 20-30 seconds.

Hack #2: Separate any remaining uncooked bacon slices and roll into individual pinwheels. Place on cookie sheet in freezer to freeze. Place in sealable freezer bag or container. The frozen slices can then be thawed in the portions desired.

  1. I like bacon. I like crackers. Never have I combined the two. Now that I have your recipe, maybe I will try that too. Mostly I like to put cheese on crackers. Or Ham. I like to use bacon in BLT sandwiches. 

    Now I have something new to explore. Can you make other suggestions how bacon can be used in other snacks?

    1. I would have never thought of this either.  A good friend gave me this recipe!  As for adding bacon to other recipes, funny you should ask:  I’m going to add bacon to this roasted garlic spread the next time I make it and spread it on crackers.

    I was looking for some easy to do snack recipes. Due to lockdown, my options are very limited. And this really looks easy and delicious. But, I have neither brown sugar nor parmesan.  But I do have a little bit of Feta, Swiss, and a whole lot of Cheddar and Mozarella cheese in my pantry. Can we swap the Parmesan cheese for any these four? 

    1. I see no reason why you couldn’t. Maybe you can do a few using each kind of cheese to decide which one(s) you like best.  Please let me know how they turn out!

    I love the idea of bacon wrapped crackers and I wish I could eat these every day for my lunch 🙁 But, I think I am just going to have to have these as a treat from time to time.

    1. Thank you for your comments, Tom! It’s true…these are best as an occasional snack and I find that the cooking time helps with that. I think I would eat waaaaaaaaaay more of them if I didn’t have to invest two hours of baking time!
