Chicken Pesto Naan Pizza

 

2 tbsp butter

1 small onion, thinly sliced

¼ of one naan dough recipe (¼ lb)

⅓ cup fresh green onion pesto

⅔ cup cooked chicken, cubed or shredded

1 cup mozzarella cheese, shredded (4 oz)

Salt and pepper to taste

 

Melt butter in a skillet over low heat.  Add onions and saute until golden, about one hour, stirring occasionally.  Remove from heat and set aside.

Preheat oven to 450℉.

Sprinkle a sheet of parchment paper with cornmeal.

Roll naan dough into a ball.  Lay on parchment paper, sprinkle with cornmeal and, using a rolling pin, roll the ball into an 8” circle.  Coat the rolling pin with cooking spray if the dough begins to stick.

Slide naan (still on parchment paper) onto a baking sheet or cooking stone.  Bake for 6 minutes.  Remove from the oven and let it cool for 5 minutes.

Spread pesto over naan.  Top with chicken, onions and cheese.

Place pizza back in the oven and bake for 5-7 minutes or until the cheese is melted and bubbly. Sprinkle it with salt and pepper to taste.

 

3 servings, 450 calories per serving

Hack:  Pizza can be stored in the refrigerator for up to 5 days or can be frozen, tightly wrapped, for up to 3 months.

  1. That chicken pizza looks and sounds good!  I, too, enjoy making meals from scratch and like eating them even more!  I checked out the recipe for naan and it looks fairly simple to make.  I have heard of naan but have never eaten it, but it seems quite basic.  I think I will give it a try!

  2. My mom would also make homemade pizza but nothing like this. It looks delicious!!! I am tempted to get the ingredients from the store and make it myself. 

    About how long does it take to put it all together? Besides the bake time? Someday if I feel I have the time this looks like a great recipe to try!!! I love pizza!!!

    1. Since all the components of this recipe can be done in advance, it will take you less than 20 minutes to get dinner on the table for dinner! 

  3. Wow, this looks amazing! I recently found that my local grocery store has frozen naan that cooks up nicely, so I could use that as a shortcut when needed, but honestly, fresh naan from the oven is hard to beat! 

    How long should I expect the whole process to take? Do the naan and pesto recipes take long to pull together and prepare? Everything looks simple enough if those 2 elements aren’t too complicated! Thanks so much!

    1. Both the naan dough and the pesto involve nothing more than blending the ingredients.  The naan also involves some rising time but it (and the pesto) can be made days in advance and stored in your fridge so putting together this recipe is a snap!

  4. Have to say that nann pizza looks pretty tasty and easy to make!

    I don’t particularly like shop-made pizza and prefer homemade; there’s just something extra special about making pizza from scratch. 

    I will be giving your recipe a go; you have made it clear and easy to follow; I’ve never made naan dough, so that’s an extra bonus for me.

    1. Nothings beats homemade pizza and the fact that you can make the naan dough up to three days ahead is a bonus!  It makes dinner come e together quickly!
