Chinese Potato Noodles

In this video, Yuhong’s Country Kitchen will show us how to make authentic Chinese potato noodles. It’s a quick and easy side dish for any meal!

Chinese Potato Noodles

 

1 large potato

2 tbsp vegetable oil

2 dried chili peppers (optional)

2 tbsp black (Chinese) vinegar

Pinch of salt

2 green onions

 

Wash and peel the potato.  Using a mandoline, spiralizer or knife, cut the potato into thin shreds, 2”-3” inches long.  Cover in cold water and soak for 3 minutes.  Rinse thoroughly to remove starch.

Heat oil and chili peppers (if desired) over high heat.  When the oil is hot, remove chilis and add potatoes, vinegar and salt.  Saute for 5 minutes and add green onions.

Serve hot or cold.  Store leftovers in the refrigerator for up to 5 days.

 

3 servings, 180 calories per serving

Hack:  Chop leftover green onions and freeze in a sealable freezer bag or container for future use. While they won’t retain the crispness that would make them suitable for salads or garnish, they will be fine for cooking.

    They are so simple to make as well, so quick and with such few ingredients.

    The video makes it so easy as I can see exactly what I need to do and don’t have to guess or hope anything.  I like how you cover every part of the recipe but quickly do that I don’t have to watch for ages.

    1. These particular noodles are made from white potatoes but now I think I would like to try it with sweet potatoes.  Thank you for the idea!

  3. That sounds amazing like little miniature fries. Is there any type of potato that you prefer to use? I can see how they would be really good when hot and crispy but what dishes would you use them in cold and not crispy? Anyway, thanks for the recipes⸺I will have to give it a try.

    1. Russet potatoes are a good choice for this recipe as they hold their shape better when cooked. I have only seen these potato noodles served as a side dish but I’m sure you could add some other vegetables, cheese or spices to dress it up!  If you find other interesting uses for these noodles, please come back and let us know.

  4. Thank you for another delicious recipe! I want to try the recipe, however, I don’t know where to find the black chinese vinegar. Is there another type of vinegar to substitute it and still have a delicious meal? I also like the fact that it doesn’t contain many calories per serving. Thank you for also providing video instructions!

    1. Black Chinese vinegar can be purchased at an Asian market or online but you can substitute white rice vinegar or rice wine vinegar!
