Oil Free Lemon Poppy Seed Salad Dressing

½ cup lemon juice

1 tsp minced garlic (1 clove)

1½ tsp grated ginger

1½ tbls maple syrup

1 tbls dijon mustard

¼ tsp salt

Pepper to taste

⅓ cup water

1 tbls poppy seeds

Combine all ingredients except poppy seeds. Blend with mini food processor or immersion blender until smooth. Add poppy seeds. Store in a tightly sealed container in refrigerator.

8 servings, 20 calories per serving

Hack: Do you know that you can freeze fresh ginger root? Grating it in it’s frozen state is easier than grating it fresh and, if you choose organic ginger, you don’t have to peel it! Simply place in a sealed freezer bag or container and pop it in the freezer.

Hack: Use this dressing to make Lemon Poppy Seed Chicken with Rice Noodles or Easy Pan Seared Scallops / Shrimp!

  1. Hmmm, this is a very interesting recipe. I’m typically not the fondest of lemon flavored foods, but I’m always willing to try a recipe once to see if I like it (miracles do happen. Haha).
