Oil Free Lemon Poppy Seed Salad Dressing

 

½ cup lemon juice

1 tsp minced garlic (1 clove)

1½ tsp grated ginger

1½ tbsp maple syrup

1 tbsp Dijon mustard

¼ tsp salt

Pepper to taste

⅓ cup water

1 tbsp poppy seeds

 

Combine all ingredients except poppy seeds. Blend with a mini food processor or immersion blender until smooth. Add poppy seeds. Store in a tightly sealed container in the refrigerator.

 

8 servings, 20 calories per serving

Hack: Do you know that you can freeze fresh ginger root? Grating it in its frozen state is easier than grating it fresh and, if you choose organic ginger, you don’t have to peel it! Simply place it in a sealed freezer bag or container and pop it in the freezer.

Hack: Use this dressing to make Lemon Poppy Seed Chicken with Rice Noodles or Easy Pan Seared Scallops / Shrimp!

  1. Hmmm, this is a very interesting recipe. I’m typically not the fondest of lemon flavored foods, but I’m always willing to try a recipe once to see if I like it (miracles do happen. Haha).   3. Cynthia, this dressing looks so delicious, you have me licking my lips. The ingredients suggest it has quite a kick.  Do you recommend to combine it with any particular type of food?  Fish? The tip regarding keeping ginger frozen in order to allow it to grate more easily is a terrific idea.  Thank you. I have saved your site; you clearly have some terrific advice.

    1. I typically use it for chicken and shellfish.  I’m not a big fish fan but I know that many people pair lemon flavor with fish.  If you decide to try it, please let me know if you liked it!
