Scallion Pesto

Scallion Pesto

4 cups scallion or green onions, coarsely sliced

1 cup fresh basil

2 tbsp fresh chive

5 cloves garlic (5 tsps minced)

½ cup olive oil

¼ cup pine nuts

¼ cup parmesan cheese

3 tbsp lemon juice

½ tsp salt

Place all ingredients in a blender or food processor and blend until smooth.  

Yield:  2 cups

Serving size:  ¼ cup, 175 calories per serving

Hack:  Pesto can be stored in the refrigerator for up to 7 days or frozen for 12 months.

Hack:  Pine nuts can be stored in an airtight container in the refrigerator for 2 months or in the freezer for 6 months.

Hack:  Chop leftover green onions and freeze in a sealable freezer bag or container for future use.

  1. Hello there, thank for sharing this information with us all and it’s really good to learn something new online. The Scallion Pesto is very nice to see and it’s been something I have heard a few things about and I was meaning to know about it. I really appreciate the efforts you out into making the hack known to us all and that is good. 

    1. Thank you for your kind comments!  Being a single person, I was always hesitant to buy a package of something just to use a small amount (and presumedly throw away the rest).  I’ve done my research on how to properly store and preserve different items so I wanted to share!

I’m really happy I came across this.  Reading about this article Scallian pesto sounds really interesting. Well I haven’t heard of such meal before but going through this article was indeed informative and helpful 

    1. You may be more familiar with the term green onions, which are the same.  Pesto, whether made from scallions or just basil, is more of a condiment than a meal. It is often used on pizza, tossed in pasta or with chicken/fish.  I hope this helps!
