Ingredients
  

  • 1 whole-wheat pita
  • ¼ cup ricotta cheese
  • tsp garlic powder
  • cup chopped frozen spinach, thawed with excess liquid squeezed out
  • 3-4 slices fresh tomato
  • 2 tbsp feta cheese
  • ¼ tsp dried oregano

Instructions
 

  • Heat oven to 400℉.
  • Place pita on baking sheet. Mix ricotta and garlic powder, spread over pita to edge. Top with spinach, tomato and feta. Sprinkle with oregano.
  • Bake until edges of pita are golden brown, about 12 minutes, Serve warm.
  • Hack: Freeze any leftover pita bread in its original packaging for up to 2 months.

  1. This recipe looks like truly something. I mean, I couldn’t agree more. This looks perfect for a meal of one on a really busy weekday. Which is also easy to mold into a meal for two. I mean, it looks perfect. Plus, the recipe itself looks pretty straightforward. And I bet it tastes delicious. The fact that it’s vegetarian is also good. I love that. Plus, if someone really needs to, adding just a few meat-like features should be no problem. And, as always, I love those hacks. I appreciate it. Cheers. 🙂

  2. I was wondering if we had to cook spinach before putting it on pizza? But I recently discovered that arugula and spinach don’t need to be precooked for pizza. Which in my book makes it very convenient. I love ricotta cheese and dried oregano. My mouth is made water just in thinking about this pizza. Thank you!
