Vegetarian Tortellini Soup

 

2 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced (2 tsp)

¾ cup tomato paste

2 cups tomatoes, chopped

1 cup vegetable broth

1 tsp sugar

1 bay leaf

½ tsp Italian seasoning

½ tsp salt

1 cup cheese tortellini

 

Heat oil in a saucepan over medium heat.  Add onion and saute until tender but not brown, 5-7 minutes.  Add garlic and saute until fragrant, about 1 minute.

Add tomato paste, tomatoes, broth, sugar, bay leaf, Italian seasoning and salt.  Bring to a simmer and add tortellini.

Simmer until tortellini is tender, 10-12 minutes or according to package directions.  Add additional chicken broth to thin soup, if desired.  Remove bay leaf before serving.

3 servings, 300 calories per serving

  2. We have decided to eat veggie food for a couple of days a week, and I’m now scouring the web for recipes. This soup sounds both yummy and easy to make. I think my kids will like it as well. It would be helpful if you could estimate the time it takes to make the food as well. Thanks from a stressed mom.

    1. Sometimes I will also forgo meat for a few days, just to give my body a break!  I hope you’ll let me know what your family thought of it!  In regard to your question on time:  This would take about 30 minutes to make.

  4. Great recipe you just shared here and an easy one to prepare too. Even though am not a vegetarian, I think its worth a try. Hoping to improve may cooking skills too, besides not liking to cook or good at it though. Will try making exemptions on this one, cause that image of the prepared vegetarian tortellini soup is way to much appetizing and tempting too. Kind of gives the desire to try it out.
