Simple Chicken and Gravy

 

2 tbsp olive oil

½ onion, chopped

1 clove garlic, minced (1 tsp)

2 tbsp flour

1 cup chicken stock

½ cup sour cream (4 oz)

1 cup cooked chicken, cubed or shredded (12 oz)

 

Heat oil in a saute pan over medium heat. Add onion and saute until translucent (5-7 minutes). Add garlic and saute until fragrant (1-2 minutes).

Add flour, whisking constantly, and cook until bubbly. Add stock slowly, whisking constantly. Allow to simmer until gravy thickens (1-2 minutes).

Add sour cream and chicken. Stir just until warmed through. Do not allow it to come to a boil.

Serve over rice, potatoes or noodles, if desired. Leftovers can be refrigerated for up to 5 days.

 

3 servings, 300 calories per serving (excluding rice, potatoes or noodles)

Hack: Frozen chopped onions would work well in this recipe.

  1. This recipe looks SO yummy! I like how simple it is in regards to ingredients and instructions. 

    I like that you shared a hack to use frozen onions. This is a great tip as I do not always want to chop up a fresh onion. I plan on cutting up some onions and freezing them now.

    Can the leftovers be frozen?

    I plan on making this recipe this weekend and serve it over rice!

    1. Thank you for your kind comments!  In regard to freezing, sour cream doesn’t tend to freeze well.  It would still taste the same but the texture will suffer.

This looks a lot like my moms chicken and rice dish and I’ve been looking for years to find a way of making the sauce without all the chemicals, preservatives and salt that are in canned cream of whatever. This might just be the recipe I’ve been looking for to keep that southern taste without the guilt.

  5. Well, I would be damned if i don’t get to admit that am becoming a chef in my little kitchen. The simple chicken and gravy would test better with a combination of both rice and potatoes from my point, don’t know what others would like but that’s from my perspective and thank you for sharing such a great recipe.
