Western Breakfast Burrito

 

¼ green pepper, chopped (¼ cup)

¼ orange pepper, chopped (¼ cup)

¼ onion, chopped (¼ cup)

1 slice ham, chopped (1 oz)

2 eggs

2 tbsp milk

Salt and pepper to taste

1 ounce shredded cheddar cheese (¼ cup)

1 10” tortilla or sandwich wrap

 

Heat skillet over medium heat. Spray with cooking spray. Add peppers and onion and saute until tender, 5-7 minutes. Add ham during the last 2 minutes of cooking.

Break eggs into a small bowl and add milk. Beat thoroughly to incorporate and add to the pepper/onion mixture. Add salt and pepper to taste. Sprinkle cheese over the top.

Scramble eggs until set and remove from heat.

Lay the tortilla on a plate or other flat surface. Spread eggs on ⅓ of tortilla, fold sides in and roll to form a burrito. Serve immediately.

Hack: Frozen chopped peppers and onions can be used in this recipe

Hack: Substitute your favorite cheese for cheddar or use whatever you have on hand.

I have been searching for new recipes and alternatives to the things that I already eat on a daily basis and this just gave me such inspiration to start improving my eating habits. This breakfast wrap sounds absolutely delicious and I’m wondering which tortilla type would you recommend? Spinach, whole wheat, cheese, original…?

    1. It’s hard to come up with original ideas that are healthy and easy to make, so I’m happy I could help.  As for the flavor, that’s totally up to you as I think any kind would taste great.  My personal favorite is honey wheat!

Thank you so much for sharing a good recipe to add to my breakfast menu of the week, as I’m always looking for some new ideas to keep on track for a good diet, your burritos recipe look good and it will be a good addition my any breakfast weekly or monthly menu. I will only add to it a good mexican hot salsa, it will make it better! Your recipe could also be good for a light dinner!

  3. This looks like such a delicious western breakfast burrito. It looks like it is so simple to make and looks mouth watering!

    Although 500 calories is a lot but I will still definitely be trying this recipe for the western breakfast burrito 😉

Thank you for your comments, Tina.  If you feel that 500 calories are too much for you to consume at one meal, you can cut the recipe in half, using one egg and half a tortilla (or a smaller one) and/or leave out the cheese.  You can also cut the original size tortilla in half and eat the other half at another meal!  Enjoy!
