
Caprese Salad with Balsamic Reduction
2 cups grape tomatoes, sliced in half (12 oz)
2 cups mozzarella pearls (8 oz)
¼ cup fresh basil leaves
3 tbsp balsamic reduction
Salt to taste
Pepper to taste
Place tomatoes and mozzarella pearls in a bowl. Tear basil leaves and sprinkle over top. Toss with balsamic reduction, salt and pepper.
Serve immediately. Store leftovers in the refrigerator for up to 3 days.

That looks very delicious, I am both a fan of mozzarella and grape tomatoes, and if it was up to me I would eat everything with basill. The receipt sings to my taste bud. Like I said it is appealing to the eye. I always struggle with milk products at the table. My daughter is lactose intolerant and does not like tomatoes. For some reason, grape tomatoes are fine with her. What could I substitute for the mozzarella?

There are some great non-dairy mozzarellas on the market which are often made from cashews! They are usually referred to as vegan cheese and, although every store is different, I can find them in the produce section of my local supermarket. A great solution to make the whole family happy would be to put the cheeses in separate bowls on the side and let everyone make their own choice.
This really is an extremely simple salad dish that can literally be thrown together in seconds, yet it would look so well on the table.
Not only will it look good, but it will be a great taste. The juicy tomatoes along with mozzarella and balsamic will have the taste buds on overdrive.
This is definitely another one for me to use to impress my family.
