Slow Cooker Cranberry Pork Roast


2 ½ lb boneless pork roast

2 cup whole cranberry sauce

¼ cup honey

2 tbsp onion powder


Place pork roast in a slow cooker.

In a small bowl, mix cranberry sauce, honey and onion.  Pour over pork roast.

Cook on low for 10-12 hours.

Remove pork from the cooker, shred and stir back into the sauce.

Serve over rice, egg noodles or mashed potatoes.


6 servings, 430 calories per serving

Hack:  Freeze leftovers in servings for future use.

Hack:  Fresh cranberries are only between October and December, which is why they’re such a holiday favorite!  Take advantage of that time window to buy a few extra bags for your freezer.  Did you miss your chance?  Check the freezer section of the supermarket where you’re likely to find some in with the berry section.

  1. WOW! This looks yummy! Although it is only 7:46 AM here in California, I am sure later on I will be thinking about this recipe. Good job Cynthia describing the ingredients. By slow cooking I am sure this is very tender!  I do not do the cooking but you make it simple enough, that even a guy like could follow!

    1. John, 7:36 am is the best time to see a slow cooker recipe as it can cook all day and be ready when you get home at suppertime.  And it’s also the best and easiest thing for a guy who doesn’t cook.  All you have to do is throw the stuff in there, turn it on and walk away!  Give it a whirl and then let me know how it went. 🙂

This cranberry pork roast recipe sounds delicious. 6 servings would be perfect for my fiance and I to eat on for at least a few nights and not have to worry about cooking anything else for supper. I have not tried making my own pulled pork before so I will definitely have to give this recipe a go soon.
