Best Orange Vinaigrette Dressing

½ cup orange juice

Light syrup from one 11 oz can of mandarin oranges

1 tbls minced red onion

2 tbls apple cider vinegar

½ tsp salt

½ tsp black pepper

¼ cup olive oil

Place orange juice and light syrup in a small saucepan. Boil over medium high heat until thicken and reduced to ¼ cup., about 40 minutes. Stir frequently. Remove from heat and allow to cool for 10 minutes.

In a small bowl, combine onion, vinegar, salt, pepper and oil. Add orange syrup and mix well.

Store tightly covered the refrigerator.

5 servings (2 tbls each), 145 calories per serving

  1. This sounds like an absolutely delicious dressing! I always like a vinaigrette on my salad and this one sounds very interesting, especially with the orange flavoring. I really like raspberry vinaigrette so this will work nicely for me. It looks so quick and easy to make, I may try it tonight!

I know this might sound somehow but salad dressing is done by professionals because if you want to do the real dressing you need to arrange everything well and make it look presentable.     1. Select small to medium-sized beets that are round and firm with fresh green foliage. The smaller beets are the most flavorful.
    2. Use gloves to protect your hands from stains when peeling and slicing. Trust me on this one. Don’t underestimate the ability of beets to stain your hands. I love peelers.

    3. Roast beets to yield a sweeter flavor.

    1. Paolo, thank you for these great suggestions!  Since the first time I roasted beets, I have never cooked them any other way but it didn’t occur to me that the smaller beets are more flavorful.  It makes sense!

I am always interested in new dressing recipes, especially easy ones.  This sounds pretty easy and it also sounds really good!  I could see it going well with a bunch of different types of salad, but I think I’d try it with some kind of seafood salad first, or the Orange Beet Salad you link to.  I get sick of bottled dressing from stores, so it’s nice to have an easy and tasty recipe like this.
